I Hate Mondays

I think the title of this post captures my mood right now 😉

I had overnight oats & coffee for breakfast and opted to not bore you with MORE overnight oats pictures, but if you’re interested in seeing some click here and here.

I found this little baby on youtube:

Who knew you could make oatmeal in a coffee pot when you’re in a crunch at a hotel?  I might have to try this when I go on vacation next week!  The herbal tea addition also sounds like it would be delicious in the oatmeal.  Have you ever tried this before?  Was it as good as it sounds?

I roasted pumpkin seeds this weekend!

I took:

  • 2 cups raw pepitas
  • 1 tbsp olive oil
  • 1 tbsp sea salt

& roasted them at 200 degrees for 20 – 25 minutes.

I also used these GU gels on my run yesterday in preparation for my half marathon next Sunday:

I technically only used the Espresso Love but brought the Mint Chocolate to taste as well.

The verdict?  Well Espresso Love was great, had an awesome taste, the caffeine really PERKED me up, and left no awful taste or upset tummy.  Mint Chocolate tasted fine as well and although it has no caffeine, I assume since it has the same ingredients as Espresso Love that it works the same.

I’ve only had dates in Larabar form so I am very excited to try them, stay posted for a date tasting later this week!

& because I have class until 3 and don’t have time for a proper lunch in between, I snack on larabars and fruit in between classes

Questions:

I’m also interested in trying out some almond butter, are there any recommendations for brands and/or styles?  Raw or roasted?  Salted or unsalted?  I’m lost!

What’s your favorite bar to snack on when you don’t have time for a full lunch? Larabars all the way for me! 

How do you cope with the dreaded Mondays? A strong cup of black coffee (or two) for me 🙂

Twelve Miles in the Morning

I just got back from a wonderful 12 mile run and immediately scarfed down some overnight oats

You can tell that I HATED them, right?  😉

I also iced my shins, while they weren’t bothering me at all during the run I have a tendency to have shin splints so better safe than sorry:

The rest of today is being spent studying for my North American Archaeology midterm, World Civ since 1500 midterm, and writing a scholarship essay.  Then, I’ll be watching Big Love & Desperate Housewives!  (Poor Katherine, that character’s been through the ringer–they made her crazy and now they’re making her a lesbian!)

Of course I’ll also be watching the hockey game, GO USA!!

How are you spending your Sunday?

Are there any TV shows you watch regularly?  Right now I’m just watching Big Love, Desperate Housewives, and Grey’s but also follow True Blood, Weeds, and Dexter 🙂

I’m A Total Eggslut

On the radio yesterday the DJ was talking about how there’s this sound at such a high frequency that only people under 25 can hear it:

In lieu of ripe bananas for oats this morning I opted to make scrambled eggs with spinach

A guilty pleasure of mine is filling out questionaire things for blogs, much like this one that I got from Jen:

So – HAVE YOU EVER….

1)  Walked out of a movie in the theatre?

 Yes!  My freshman year of high school Texas Chainsaw Massacre came out and I went to go see it with a few friends, needless to say I was a scaredy cat and spent the entirety of the movie in the hallway.  I’m still not much of a scary movie fan!

2) Spontaneously bought/watched a movie that was out years ago…but brings up “sentimental” feelings?

Ohhh man, there are many movies that bring up sentimental feelings.  Clueless was a movie that I loved growing up and it was funny watching it recently because there was so much that I just didn’t get in the movie when an elementary-schooler.  10 Things I Hate About You and Drive Me Crazy (gotta love Adrien Grenier), also. 

3) Had a major celebrity/athlete/singing crush “back in the day”?

Justin Timberlake from NSYNC, Kevin from Backstreet Boys, & Leonardo DiCaprio because of Titanic and The Beach!

4) Called in “sick”/made an excuse to work or cancelled an appointment/meeting/get-together with friends, co-workers, etc. (but you weren’t actually?!)…

Of course, everyone needs a personal day for one reason or another.

5) Just come home from work – when you should be going to the gym/doing some activity/being productive…and instead plopped on your butt with FOOD and a book/TV, a bath, some music….and just completely VEG OUT and become a LAZY BUTT…but not give 2 damns’??

YES.  & I am not ashamed. 🙂

6) Had a HORRIBLE hair-cut that made you want to cry or hide out for, well, a year until it grew out?

Hasn’t everyone?  Haha.

7) Had your Heart broken? How did you deal with it?

I’ve had what I thought was my heart broken at the time but looking back, it was just me being overdramatic about something that really wasn’t important.  I’ve never actually had my heart broken.

8)Wanted to look like or BE another celebrity?

Guilty.  I’ve wanted to look like  Zooey Deschanel, Kate Moss, and Keira Knightley.  I don’t think I’d enjoy being a celebrity, I’d hate not being able to go anywhere without paparazzi present and body guards near.

TGIF B-Fast & Pancake Roll-Ups

Today has been a good day so far!

I’m planning on participating in an archaeological field school in Peru this summer and I got a letter from the Anthro department at my school that I was awarded a $500 research scholarship! I am incredibly happy about it- field schools are expensive and this will be tremendously helpful with funding.

Also, I went to a really cool lecture today about Underwater Archaeology in Ghana. I decided last minute to go and I’m very glad that I did. While underwater archaeology is something that I would NOT want to pursue (it involves scuba diving and I would not be comfortable doing field work under water!) it was very interesting to learn about because I really knew nothing about it before the lecture. The archaeologist that came to speak, Dr. Kira Kaufmann, is involved in historic archaeology and the time of European colonization in Africa, which is also something I’m not too familiar with. Most of the archaeology classes I’ve taken have stopped at the historic period and only cover prehistory.

I fueled this day of classes & lecture with overnight oats for breakfast!
A little different than my usual, they contained

  • 1/3 cup rolled oats
  • 1 cup Oikos
  • pinch salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp agave
  • 1 banana
  • 3 tbsp flax

Twas DELISH!

I eat a lot of fruit a day and rarely post pictures of it.. So here’s a couple oranges that I had with breakfast 🙂

Katie is having a Pancake Roll-Up Contest and I was thinking long and hard about what kind of pancakes I wanted to make…..

After hours and hours a while of thinking, I finally decided what to make for a late lunch/early dinner.

Egg White Pancakes Roll Ups with a Portabello-Spinach-Onion-Garlic filling 🙂

For the filling, (I don’t measure out vegetables when I’m cooking them, so I’ll just list the ingredients I used):

  • a hell of a lot of spinach, washed
  • copious amounts of mushrooms, sliced
  • 1 small onion, chopped (the tears were flowing!)
  • 1 clove of garlic, smooshed and mashed
  • lots of curry
  • lots of paprika

I first sauteed the mushrooms, onion, and garlic in EVOO and then added spinach, curry, and paprika.

Then once the filling was well on it’s way, I measured out 1 cup of egg whites, took 2 small pans with EVOO and put 1/2 cup of egg whites in each pan.

I flipped the eggs over when they were finished on one side & then prepared them in roll-up fashion 🙂

Okay so they’re not technically pancakes, but they’re pancake-like and delicious so who cares?  right?!

Whenever I think of different ways of making eggs (sunny side up, scrambled, poached, over easy, over medium, over hard….etc) I always think of The Runaway Bride and how Julia Robert’s character, Maggie, always said her favorite eggs were the same as whoever she was dating/engaged with and eventually, with Richard Gere’s character’s help I’m sure, figures out how she really likes her eggs:

 “I love Eggs Benedict, I hate every other kind. I hate big weddings with everybody staring. I’d like to get married on a weekday while everybody’s at work. And when I ride off into the sunset, I want my own horse. “

How do you like your eggs? I like them over hard or hard-boiled 🙂

 

By the way, the one truth about me in my “4 lies & 1 truth” post last night was unfortunately #3…  it eventually happens to every runner sooner or later 🙂

Four Lies & One Truth

Now on to the delicious meal I made for dinner:

On Tuesdays & Thursdays I have class from 7 am to 4 pm, without a long break between any of my classes so I usually eat a ridiculously large breakfast and then snack on 2 or 3 granola/larabars/or clif bars, and then come home to an earlier dinner.

Today I felt like eggs after seeing an egg sandwich on Ashley‘s blog earlier today.  Unfortunately I had no bread 😦

So I roasted brussel sprouts and asparagus with EVOO, lemon pepper, and sea salt and scrambled 5 egg whites (I need my protein!)

I then combined the roasted veggies with the eggs in the pan and added a bit of soy sauce.  (soy sauce = love)

National Eating Disorders Awareness Week

This week is National Eating Disorders Awareness Week

Eating disorders are very serious and as some one who has delt with them firsthand.. the earlier they are detected and treated, the better.

Here are some facts about eating disorders from NEDAW’s website:

 
  • Eating disorders are serious, potentially life-threatening conditions that affect a person’s emotional and physical health.
  • Eating disorders are not just a “fad” or a “phase.” People do not just “catch” an eating disorder for a period of time. They are real, complex, and devastating conditions that can have serious consequences for health, productivity, and relationships.
  • People struggling with an eating disorder need to seek professional help. The earlier a person with an eating disorder seeks treatment, the greater the likelihood of physical and emotional recovery.

 

While this is Eating Disorders Awareness Week, I also look at this as LOVE YOUR BODY week!

Our bodies are amazing, resilient organisms that can do awesome, amazing, impossible things (even though we may put them through hell with dieting, scrutiny, etc). 

What’s your favorite part of your BEAUTIFUL body?  —– my favorite parts are my legs because they carry me through ALL my runs 🙂

Speaking of legs & running……

My favorite signs that people carry during races are the ones that say “The Kenyans are Behind You” or “You’re all Kenyans in Our Eyes

(Why do Kenyans run so fast, you ask??  Take a look here at an article about how high altitudes and endurance running are excellent combinations, just another reason as to how our bodies are AMAZING adaptable organisms 🙂 )

My Running Shoes & Larabar Product Reviews

I promised pictures of my running gear, which really is my shoes because I can wear any workout clothes and run:

These babies are Nike+ Lady Triax 12 & my second pair of ’em!

See those PINK SOLES inside?  Those are my Superfeet inserts!  They work wonders with my feet & I recommend checking them out at your local running store.

All this talk of barefoot running has me quite intrigued!!  I need to read “Born to Run,” which is next on my list after “The Omnivore’s Dillemna” (which I am currently reading)

What shoes do you run in?  Are you a barefoot runner- what made you decide to change from shoes to solely (heh) feet??

Now… ON TO THE LARABARS!

I discovered Larabars at the Medtronic Twin Cities Marathon expo & have been mildly obsessed ever since..

Those ones in the picture are the flavors I currently have in my pantry.  Jealous? 🙂

I haven’t tasted a bar I haven’t liked.  They are made or 3 -5 ingredients and consist of a date base with nuts and dried fruits (sometimes one or two spices) added in for the flavor.

Because I have nothing negative to say about them, I’m going to list them in the order of their tastiness, with ONE being the best!

  1. Peanut Butter & Jelly
  2. Peanut Butter Cookie
  3. Key Lime Pie
  4. Pecan Pie
  5. Lemon Bar
  6. Apple Pie
  7. Cherry Pie
  8. Cinnamon Roll
  9. Cashew Cookie

Those are all the ones that I’ve tasted and while they ALL TASTE AMAZING, some clearly taste better than others.

Alright, I’ve got a Spanish midterm tomorrow and an Archaeology Regional Culture (Cajamarca in the Andes) project due tomorrow morning so I better get to it!!

All this talking of pies from reviewing Larabars has got me thinking about pie— what’s your favorite pie??  My favorite is a tie between Pumpkin and Key Lime… nom nom nom..

Vegan Pumpkin-Banana-Oat-Flax Muffins

That’s a mouthful, eh?

Well regardless, these VEGAN muffins I just made from scratch are DELICIOUS!

  1. Take the following dry ingredients and mix ’em in a bowl
  • 2 1/2 cups whole wheat flour
  • 1/4 cup ground flax
  • 1/4 cup rolled oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg

2.  Mix in these wet ingredients:

  • 1/2 cup pureed pumpkin
  • 1 whole banana mashed
  • 1/2 cup agave
  • 2 tbsp canola oil

3.  Then after that’s been mixed well, add in:

  • 1/4 – 1/2 cup pumpkin seeds and mix well

4.  This makes about 10 muffins.  Bake for 20 minutes & enjoy 🙂

Mornin’ Ya’ll

Paula Deen here!  (Just kidding.. although she’s welcome to cook me breakfast any day of the week as long as there is no butter involved!)

My morning habits consist of waking up and zombie-walking to the coffee maker to “wake” up, finding a good section of the news paper to read, and making my brekkie.  Regardless of what the contents of the Trib are, I absolutely HAVE TO read two small but very important sections:

& my HOROSCOPE! Yep, I’m a scorpio!

& I like comparing my horoscopes to ones listed at other places-

Overnight oats!!!

  • 1/3 cup rolled oats
  • greek yogurt
  • 1 tsp agave
  • pinch salt
  • 1 tsp cinnamon
  • 1 & 1/2 bananer
  • 2 tbsp ground flax

I believe that coffee a good quote can make all the difference in the outcome of your day, it can inspire motivation, determination, self-confidence..etc

Who Says You Can’t Have Eggs For Dinner?

For dinner today I had sauteed spinach and portabellos, with 3 servings of egg beaters with curry & paprika on top of 5 roasted red potatoes.  Nom nom nom..

Well, I’ve got lots of studying to do tonight:

  • Reading Ancient North America textbook
  • Cajamarca regional culture project for my Archaeology of the Andes class
  • Reading articles on the Phillipines for my Peoples & Cultures of Insular Southeast Asia class
  • & I’ve also got to hit the gym tonight!
