Last week when I was on vacation, Serena from Blue Mountain Organics sent me a sample of Coco Joy, a product from The Raw Bakery, one of their product lines.

How awesome is that?!

If you’re a coconut lover, as I tend to be, you’ll LOVE this item!  It had a great chewy filling texture that had a strong coconut/nutty taste and the chocolate outside complemented it well.

Although a bit calorie dense (if you can’t read that picture, it’s 240 calories, 15 g fat, 5 g protein), this was a very filling, tasty & sweet snack.

But- the only ingredients were: Cashews, Agave, Coconut, Cacao, Golden Flax, and Vanilla.  How simple and great! 

Taste:  8.5/10

Company & Values: 10/10

Ingredients/Nutrition: 9/10

Overall?  A great company that features tasty products with wholesome ingredients.  Steer clear of this particular one if you hate coconut but if you love coconut, this is the tasty treat for you!!

Vegan Pumpkin-Banana-Oat-Flax Muffins

That’s a mouthful, eh?

Well regardless, these VEGAN muffins I just made from scratch are DELICIOUS!

  1. Take the following dry ingredients and mix ’em in a bowl
  • 2 1/2 cups whole wheat flour
  • 1/4 cup ground flax
  • 1/4 cup rolled oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg

2.  Mix in these wet ingredients:

  • 1/2 cup pureed pumpkin
  • 1 whole banana mashed
  • 1/2 cup agave
  • 2 tbsp canola oil

3.  Then after that’s been mixed well, add in:

  • 1/4 – 1/2 cup pumpkin seeds and mix well

4.  This makes about 10 muffins.  Bake for 20 minutes & enjoy 🙂
